Potomac ABC Recipe

Vegetarian Loaf

Ingredients:

1 10-oz pckg frozen spinach,
   t hawed
2 tbsp vegetable oil
1 onion, finely chopped
1 vegetable bouillon cube
1 ¾ cups boiling water
2 cups TVP* (textured tegetable
   protein)

1 lb soft (silken) tofu (I use 1
    box of Mori Nu)

1 cup gluten flour
1 tbsp nutritional yeast flakes
1 ½ tsp salt
1 tsp garlic powder
1 tsp poultry seasoning
½ tsp onion powder

Directions:

Note: vegetarian bouillon, TVP, Silken Tofu, Gluten Flour and all seasonings are available at the Potomac Adventist Book & Health Food Store

TVP-use small, unflavored granules                                              

  1. Preheat oven to 350 degrees
  2. Thaw and drain the spinach well.
  3. Sautee the onions til transparent, about 5 minutes.
  4. Bring the water to a boil, then dissolve the bouillon cube in it. After it has dissolved, add the TVP, cover, and let stand 10 minutes. (It is important to use boiling water in order to fully rehydrate the TVP).
  5. In a small bowl, mix gluten flour, nutritional yeast flakes, salt, garlic powder, poultry seasoning, and onion powder.
  6. Drain any liquid off the tofu, then mash in a large bowl. Add TVP, spinach and onions and mix. Stir in flour and seasonings.
  7. Put the mixture into a lightly greased 8 ½ x 4 ½ loaf pan. Pat down, smooth the top, then bake for 45 minutes. If the loaf begins to get too brown, cover with aluminum foil.
